Plan, Cook and Serve – Year 13 Pop-up Restaurant Event
The Year 13 IBCP Hospitality and Business students ran a pop-up restaurant for 16 guests on 19th March, 2021. The event was part of their final assessment – the student invite their form tutors, Heads of House and the IBCP teachers.
The Hospitality students planned and practiced dishes over the last few weeks and came up with a 6-course taster menu, consisting of dishes from various European countries. Including:
- Canape – Bacon and Cheese Quiche (France)
- Greek Salad, with Tomato Ice-cream
- Borscht with Lemon Sour Cream and Pink Peppercorn Crackers
- Spanish Fish with Paprika Potato and Romesco Sauce
- Duck and Mushroom Risotto with Pesto (Italy)
- Eton Mess (UK)
Tables of 4 were decorated with white tablecloths, flowers and sliver cutlery. Before the event students received expert instruction on how to serve food and drink professionally.
The guests were blown away by the standard of the food, in terms of both presentation and taste. “It was a wonderful event and our table all agreed that each dish was truly restaurant quality! It was a privilege to be invited!”, commented Ms Stephanie Weathington, Tutor of 13R.
The guest feedback, which will be used as part of the evaluation, was crucial for the students completing their unit on European food.
Chris Lord, Head of Food Technology said, “The experience will be extremely useful for their Customer Service unit. Once again, well done to all the Year 13 students and what a way to finish the course!”
Leader of the event, Rachel Handley (13R) thanked guests for their great support and feedback. “I would also like to thank Mr Lord, Ms Lewis and Ms Raquel for supporting us with this event. On behalf of the team, I’m sure I can say the event was a very special way to experience our last cooking practical and end our hospitality journey at Island School” added Rachel.
