ESF Chef Competition 2018
At the finale of the ESF Chef Competition students where challenged to plan and prepare a technically challenging 2 course meal that reflected the theme “sustain”.
Their dishes had to be suitable to serve at an international style Hong Kong restaurant that showcases locally sourced ingredients.
Representing Island school in the junior category, were Andrea and Yu, who worked together to make a roasted free range chicken with homemade pesto and chocolate fondant cake with mint chocolate ice cream.
Head of Food Technology and Hospitality Mr Chris Lord said, “The students collaborated really well but the competition was won by two boys from West Island School.”
Jennifer represented Island school in the senior category, after winning every round of the Island School heats. She decided to make her take on a Vegan Edible Garden followed by a chocolate and cherry dessert, served in a white chocolate dome coloured blue and green to represent the earth. Mr Lord, “Both dishes showed fantastic creativity and were presented excellently and Jennifer’s dishes were a really interesting interpretation of the brief.”
“It was a really close competition and the judges deliberated for a long time, but Discovery College won the senior challenge, with a belly pork dish and poached pears with chilli chocolate sauce.”
